sparkling wines

Sparkling wines have been made in Italy since the ancient Roman Empire in the Charmat style. Secondary fermentation is done in large stainless steel tanks (maybe not back then, but something similar) and the wine is then bottled under pressure. This method has since been embraced throughout the world and as a result many sparkling wines are referred to as "Spumantes."

The more traditional method of making champagne, the Methode Champenoise, stipulates that the secondary fermentation occurs in the bottle and is a much more labor-intensive process. The wine must be fermented on its lees and the bottles must be rotated through a series of positions that insure the lees can then be extracted. Wines produced in this method often have lower yields, and are more complex as the wine has had more time to develop.

This may be boring you to tears right, but knowledge is power, right? Bottom line? Spumantes bottled in the charmat style are often less expensive, less complex and have bigger bubbles that last for shorter periods of time. Methode Champenoise; the opposite!
